Best Chicken Macaroni Salad

Hello friends. Today I have for you Chicken Macaroni Salad, one thing I can eat the whole day without complaining at all, yes, it’s that good.
Just so you know, it was never my plan to make this meal, but as a result of the lockdown due to the coronavirus, shops only open half a day and ingredients are scarce. We are panic-buying and shops aren’t stocking up as fast as we are buying. The coronavirus seems to be getting worse day by day, God be with us all. Ingredients for food I want to make are scarce so I am forced to be creative when it comes to cooking. I have to use what I have with me.
So, on the particular day I prepared this meal, I woke up not knowing what I was going to cook, but I knew I had to cook something. I went to my kitchen and checked the fridge and the grocery cupboard, everything was so random, didn’t know what I was going to put together and not put together however, what I knew was that I had to make it work one way or the other.
This is what I found in my kitchen:
1. Macaroni – The moment I saw my macaroni I thought mac & cheese, but I remembered I didn’t have the most essential item for the meal which is cheese, I got disappointed but put the macaroni aside and checked what else I had.
2. Chicken from last night – Ok leftover chicken, I liked where this was heading, something was starting to come together. I decided to check what else I had.
3. Lemon Juice and Mayonnaise – The moment I saw these two things, that’s the moment it clicked that I could make Chicken Macaroni Salad, and I was craving something tangy, so I’d like to take this moment to thank Lemon Juice and Mayonnaise for sparking the idea to make my Chicken Macaroni Salad…Thank you Lemon Juice and Mayonnaise. Lol.
4. Seasoning – Now that I knew what I wanted to make, it was time for my fave…seasoning time. Since my chicken was already intensely flavored, I decided to go with just cayenne pepper for some chilli vibes, and of course, some salt.
5. Balsamic Vinegar – Of course there was no way I was going to leave my balsamic out, the magical taste of a marinade is always in the balsamic vinegar, BEST BELIEVE!

Servings: 6 people
INGREDIENTS
· 4 cups macaroni (cooked)
· 3 cups chicken (shredded)
· 4 Tablespoons lemon juice
· 3 Tablespoons mayonnaise
· Half teaspoon salt
· Spinach (half cup when finely chopped)
· Half teaspoon cayenne pepper
· 1 Tablespoon olive oil
· 4 Tablespoons balsamic vinegar
DIRECTIONS
1. In a bowl, toss in macaroni, then chicken, mix
2. Add lemon juice and mayonnaise then salt, mix
3. Add spinach, cayenne pepper, olive oil, and balsamic vinegar, gently mix everything together
