Hello my good people, another day, another post!!

This is the one dish that made me believe the phrase “Food is nothing but creativity”. Good people, it was on Monday right around lunch time and all I was thinking was “man I am so hungry, what can I make for lunch?” Since it was Monday, the obvious choice was leftovers from Sunday lunch. Every Sunday at home we cook a big lunch, and we call it Sunday plate or my favorite seven colors, lol. Seven colors because its different kinds or rather colors of food from pumpkin to beetroot, from green salad to carrots and so on and so forth. So we cook so much that you find that we get to Tuesday with leftovers still from Sunday lunch, but don’t worry we don’t waste anything, it all gets eaten.


So as I was saying, the obvious choice was leftovers from Sunday, but when I got to the fridge, I really wanted something different. My mind was saying yes to the food in the fridge but my taste buds were saying no Lele, not happening. My little sister, Fifi, had made noodles in the morning before going to school and left 1 packet on the counter, seeing that one packet on the counter got me thinking of ways I could make my own noodles in a way I have never done before.


I call them zhooshed up Chicken&Veg noodles because I really did zhoosh them up, they were so good that I didn’t want to finish them. I made sure not to add too many vegetables as I didn’t want them to overshadow the noodles and the chicken. My good people, this meal is so easy and straight to the point, I used only 3 vegetables (onion, tomatoes, and green pepper) which you can substitute if you don’t want to use the exact ones I used. The noodles I used were Maggi 2 minute cheese noodles, why the cheese flavor? Because cheese is good my people, cheese wins at everything, from being in food to being in snacks. The chicken I used was the leftover chicken from Sunday lunch.




So please, just try out this meal, I promise you will not regret it. You can use any kind of veggies you want and it will still come out so good, try it out and let me know how it goes my good people. Thank you for reading, please find the ingredients and directions down below:


PrepTime: 12 minutes

CookTime: 22 minutes

Serves: 1 person

INGREDIENTS


· Maggi 2 minute Cheese noodles (1 packet)

· 1 tomato (chopped)

· ¼ green pepper (chopped)

· Already cooked chicken (1 cup shredded)

· ½ onion (chopped)

· 1 teaspoon crushed garlic seasoning

· ¼ teaspoon salt

· 1 teaspoon sugar

· Water


DIRECTIONS


1) Saute onion until translucent, then add tomatoes, lower heat and stir occasionally until everything is well blended.


2) Add salt and stir, then add sugar to enhance the flavor.


3) Add ½ cup of water, then toss in the chicken, close the lid and leave for about 3 minutes.


4) Now add your cheese noodles as well as the spice for the noodles, ½ cup water, crushed garlic seasoning, close lid and stir occasionally until the noodles are cooked.


5) Now add the green pepper and leave for one minute. The reason I add my green pepper last is because I love it still raw, if you don’t, its ok to add it earlier together with the onion.


6) SERVE AND ENJOY!!!
