Cheesy Mashed Potato Croquettes and Fresh Herb Salad

Hello my good people; I am so excited about today’s recipe why? Because it is something I have never done before, I didn’t even know such a recipe exists! I still remember the first time I saw the post about this recipe, it was drool at first sight and when I saw how affordable the ingredients were, I knew that was my next meal prep.


So how did I come across this recipe? Hmm, how did I though?! Oh yes, I was scrolling through my Instagram feed when suddenly I came across this ever so glorious image of cheesy mashed potato croquettes with fresh herb salad. I. COULD. NOT.CONTAIN. MYSELF. Bear in mind I had not seen nor tasted anything like it before, but on that day, I saw it, I loved it, and my mind was like “Lele, you gotta make this and not just see it and love it girrrl”!!


So my mind had spoken my good people, and cheesy mashed potato croquettes with fresh herb salad had to be made by me myself and I, the one and only Lele. You know sometimes when you look at food images on Instagram or anywhere else and they look so good but you can’t help but wonder if they taste as good; that’s always me but with this particular dish, I looked at the image, it was bomb! I went through the ingredients, they were bomb*2! At this point as you can imagine, there was no way I was passing on this dish.


My favorite time came which is shopiiiiiiing for ingredients. I love this part of meal prep because this is where you can actually see what else you can add to the ingredients in order to add more flavor. Yes my good people, I’m like that; I always write down the recipe as written down by the author but when it comes to buying, I always add on the ingredients or switch them just to add my personal touch. However, with this particular recipe, I wanted to follow it to a tee because I had never seen anything like it.


I bought everything written down and the total cost was R82.00, which I found to be very affordable. I then came back home and started preparing the dish. Everything came out so great, turned out to be my family’s favorite, everyone loved it especially my mom, my beautiful mom, she is my biggest fan, God bless her heart. The croquettes, my goodness, the croquettes tasted amazing my good people. Just the cheesy mashed potatoes are incredible on their own, now imagine them with breadcrumbs then deep-fried, AMAZING!!! And for the fresh herb salad I used fresh coriander herb, it took the flavor to the whole new level, a pleasant new level.


I really enjoyed this meal, it has definitely made it to my top 5 list of best food I have made so far, yes it was that good. Please try it, so that you know what I am talking about. Thank you for reading, please find the ingredients down below!


Prep Time: 30 minutes

Cooking Time: 10minutes

Serves: 4 people


INGREDIENTS for mini croquettes


· 2 Potatoes

· 100g cheddar cheese

· 30ml butter

· 1 egg

· 45ml milk

· 200g breadcrumbs

· Salt to taste

· Oil for deep-frying


INGREDIENTS for fresh herb salad

· Lettuce

· 2 carrots

· 1 cucumber

· Herbs (fresh coriander or whichever you prefer)

· Salad dressing (preferable light)


DIRECTIONS (mini croquettes)

1. In a pot of salted water, boil the potatoes until soft, then drain water and mash.


2. Mix in butter, cheddar cheese, season well and form into small balls.


3. Take each ball and dip it into a mixture of egg and milk, then coat it generously in the breadcrumbs and refrigerate for 30 minutes


4. Now deep-fry until golden


DIRECTIONS (fresh herb salad)

1. In a large bowl, mix shredded lettuce, grated carrots, sliced cucumber and herbs. Top it off with salad dressing (if going to serve immediately) and then the potato croquettes. ENJOY GOOD PEOPLE.
